Chestnut Mushrooms

Chestnut mushrooms (Pholiota adiposa) are a versatile mushrooms, with a nutty flavor and slightly sweet taste. They have a chewy texture that remains after cooking, and a long, firm stem that is tender and also good to eat.   They are great roasted,  sautéed, or pickled, but take well to many different preparations.

Chestnut mushrooms are especially popular in China and Japan.  In Japan they are known as numerisugitake, and are cultivated along with their cousin nameko mushrooms (Pholiota nameko).  Consider delving into  Japanese cuisine for recipe inspiration!  They can also be substituted in Japanese recipes that call for hen of the woods.
