Warm Shiitake Barley Salad (vegan!)

This six ingredient salad (yes, that’s right)
is light, yet filling enough to stand alone as a delicious vegan main dish paired with some leafy greens, or is the perfect accompaniment to roast chicken, grilled, meats, or pretty much anything if you ask me!
Serves 4
Ingredients:
1cup barley
¼ cup olive oil
12oz Shiitake mushrooms, thinly sliced
2 cups (about 5) shallots, thinly sliced
3 Tablespoons fresh lemon juice
1 Tablespoon fresh parsley, chopped
Salt
Pepper
Directions:
In a large saucepan, bring 3 cups of water and a pinch of salt to a boil, add the 1 cup of barley and cook until tender, about 30 minutes. Drain.
Meanwhile, in a large skillet, heat the olive oil. Add the mushrooms and shallots and cook over moderate heat, stirring until golden and tender about 7 minutes. Stir in the lemon juice, drained barley, and parsley. Season with salt and pepper to taste.
