Chinese Beef and Shiitake Mushroom Bowl
makes about 4 servings

This dish comes together in about 30 minutes and is a great recipe for people who may be unsure about whether or not they like mushrooms, but are interested in trying to integrate more into their weekly routine! The Shiitakes and beef are a delicious combination, and the mushrooms get a bit hidden in the mix… I found this to be incredibly addicting and is sure to convert even the most skeptical mushroom hater!
INGREDIENTS
Chinese Mushroom Beef
1 Tablespoon neutral flavored oil, such as avocado oil
½ small red onion, finely chopped
1 pound ground beef
1 cup finely chopped Shiitake mushrooms, stems removed
3 small cloves garlic, minced
1 teaspoon ginger, finely minced or grated
Salt and pepper as needed
Stir Fry Sauce
¼ cup Hoisin sauce
3 Tablespoons honey
3 Tablespoons soy sauce
1 Tablespoon unseasoned rice vinegar
1 teaspoon sesame oil
Cooked rice for serving
Optional Toppings and Garnishes (highly recommended!): finely sliced scallions, julienned carrots, toasted sesame seeds, pickled jalapeños, cilantro
INSTRUCTIONS
Make the Stir Fry Sauce: In a small bowl whisk together all the ingredients for the sauce. Set aside.
Heat the oil in a wok or large skillet over medium-high heat. Add in the onion and cook for 1-2 minutes, or until starting to soften. Add in the mushrooms and continue to stir-fry for an additional 3-4 minutes until the mushrooms release their liquid and start to brown a bit. Season the vegetables lightly with salt and pepper. Add in the beef, and season with salt and pepper. Sauté until almost browned, breaking it up as you go, about 4 minutes. Add in the garlic and ginger and season again with salt and pepper. Cook until aromatic, about 1 minute.
Add Stir Fry Sauce and cook for an additional 2 minutes, or until everything is coated and the beef is cooked through. Taste and adjust for seasoning with salt and pepper.
Garnish and Serve: Add rice or noodles to the bottom of serving bowls and top with beef. Alternatively, this beef is really good in lettuce wraps! Garnish with desired toppings and serve warm. Enjoy!
